Pin-Food Inspired

I have found so many yummy things I want to eat on Pinterest. My food board runneth over!

We love Sunday football and football food. Wings are a favorite of ours. I am not a particular fan of the mess involved in eating wings, so when I saw this sandwich on Pinterest, I knew I would be trying it soon. I just had no idea how soon.

We are playing two ball games today. One at ten and one at six. By the time the first one ended, NFL football was kicking off for day. So, heading out for wings and football was out, we would never get a table. Home we came. Luckily I had all the ingredients on hand.

The Grilled Buffalo Chicken sandwich is super easy to make and oh so yummy!! I have a house full of hungry teenage baseball players and they inhaled these sandwiches.

Bread, I used some thick cut white bread. 
Butter
1 T blue cheese salad dressing
3 T cream cheese
2 T blue cheese crumbles
1 T shredded cheddar cheese
1/2 cup cooked chicken
1 1/2 T hot sauce/winger sauce (I bought a bottle of Frank's Hot Sauce, but one of the boys dropped the bag of groceries and broke the bottle before we even made it inside the house. So, I used a store brand.)

Mix the salad dressing and cheeses together. Stir well.
Mix the chicken and hot sauce in a separate bowl. Stir well.
Butter the one side of the bread and put the butter side down on your grill pan.
On the non-buttered side of the bread, spread the cheese mixture on. Repeat to the other slice of bread. 
Add the chicken. Put the two slices of bread on top of each other and grill. 

Serve with carrots and celery.




Just like eating Buffalo wings, with way less mess!

The Short Chic came down with a pretty nasty case of strep throat back in April. So, when The Boy started complaining about his throat hurting about 12 days later, I was pretty confident that he had inherited his sister's strep. Instead, The Boy was diagnosed with a peritonsillar abscess growing on his right tonsil.  We had to immediately see an ENT  Physician who took a needle and drained the abscess.
